A far cry from its original life as a winery, the space is now a place for detoxing thanks to its new lease of life as a spa.

Unique in the region, the Monastero Santa Rosa spa is large and well equipped and could even be described as a destination of its own. As if there weren't already enough awe-inducing features of this hotel, but the luxe spa could well top the list.

Merely stepping into the multi-storey central treatment room it takes your breath away and the stone cavern walls induce a tranquil, calm feeling of contentment. The 750-foot space feels simultaneously spacious yet intimate - a place of sanctuary, healing and comfort not unlike its early days as a monastery.

Preserved within each treatment room are the 17th Century vaulted ceilings and a nod to Italy's Roman bathing heritage is apparent in the arched and labyrinthine Thermal Suite, with other spa highlights including a hydrotherapy pool, ice fountain, pomegranate-infused foot spa and rock sauna.

The 80m2 Spa Suite is definitely worthy of special mention . Complete with steam room, Rasul, relaxation lounge, twin wet and dry treatment couches, private dressing and grooming space and an ample garden terrace, the space truly a spa within a spa.

Treatment ingredients are heavily focused on the essential oils of Farmacia Santa Maria Novella - one of the world's oldest pharmacies.  Our favourites include rosemary, lavender, sweet orange and pomegranate fragrance; made for Catherine de Medici. Try the Iris Idralia deep cleansing facial and the bitter orange peel scrub. Bliss.
